I’ve loved your steaks and was excited to try this Tri tip. I slathered it with minced garlic and rosemary and let it cook in the sous vide at 131 for about 18 hours. Cooled down in an ice bath for 20 min. Dried it, basted with EVOO and seared 5 min a side on cast iron. Topped with a little butter and rested under foil for a few minutes. Perfectly delicious medium rare. A hit with my guests!

Buttery and loved by the full fam. Season in fridge for 6-8hr, bring to room temp for an hour before cookiny. 4 min pan sear followed by 10 min/lb @350 in oven. Zero left overs, thanks for awesome meat :)
