My first brisket. Was worried that I would mess it up with cooking in the oven. It was excellent. Trim hard fat, binder, salt, spices, cook at 225 for about 8 hours, until temp was up to 165. Then wrap, cook at 265 for a couple more hours until 205 degrees. Wrap in beach towel and rest in a cooler for 4 hours. Yum yum. Love Arrowhead. Two larger orders before this one. Great meat.
