I finally got to try this fantastic meat. I smoked it with t cayenne dry rub and then reverse seared it. The meat was juicy and flavorful! We had two rounds of french-dip with the leftovers. Yummy! My only "complaint' was I had to do some trimming, but it was well worth it!
Tri-tip is indeed one of the few remaining secrets of beef. For those that Tri it, they never go back!
Wow! This is an absolutely beautiful piece of meat. We did the classic reverse cook on our Big Green Egg last night and were blown away by the tenderness and flavor. Definitely will buy this again from Arrowhead Beef.
